John Henry Single Malt Whiskey is named in honor of the man who has managed our farm for over 4 decades, John Benjamin Henry. A Jamaican worker who first came to our farm in 1976. Crafted in very small batches, John Henry is double distilled from two-row malted barley, then rested in new oak and aged in our own Applejack barrels for 5 years. A wonderful balance of malt and smoke, it is an approachable whiskey for connoisseurs and newcomers alike at 42% ABV. Mash bill: 90% 2-row malted barley, 10% peated malt
Cocktail recommendation: The Kinderhooker 1 oz John Henry Malt Whiskey, 1/2 oz Cornelius Cherry Applejack, 1 oz apple cider, 1 oz fresh lemon, 1 oz water, 1/2 oz cherry juice, 1/2 oz simple syrup, 1/2 oz St. Alphonzo (vanilla orange bitters). To make St. Alphonzo, soak the peels of 6 naval oranges and 8 oz of dried orange peel in 1 gallon of Core Vodka. Add 32 oz of cane sugar and 250 ml of our Vanilla Extract.
With the success and popularity of our John Henry malt whiskey, our devoted customers were asking for a bourbon of the same caliber. We source young barrels of bourbon from Taconic Distillery (distilled below 160 proof) with a mash bill of 75% Corn, 20% Rye, 5%. We keep the bourbon in their original52-gallon American oak barrels of medium char #3. and age them for 3 years of aging here on the apple farm. The bourbon develops rich aromas of toasted oak, walnuts and buttered popcorn. Non chill filtered and bottled at 42% with natural color from the oak casks. Age: 3 years
